Status: ✅ working case (anonymized). Client is a Chinese sausage producer using angkak as a colorant. This page started life as a food-science primer; it now lives under case studies because a live file exercises every rule the ingredient touches.

1. Why this file is a useful case

Angkak is one of the few materials where the fermentation route, the colorant chemistry, and the alcohol rule all collide — and now it sits inside an animal product. Two audit traps arrive together:

  • Material level: the colorant must satisfy the evidence decision tree like any fermentation-route additive — but most Chinese sausage suppliers have never been asked for halal evidence on their color.
  • Product level: the colorant adds nothing animal, but it is an input on a line where cross-contact and additive questions are already live (criterion 3), and its safety profile (citrinin) is now a CoA question in its own right.

The sausage itself (meat, casings, seasonings, other additives) is the main event of the file; the angkak row is where the evidence discipline gets tested in miniature.

2. The ingredient, in one page

Angkak (red yeast rice, red koji, Monascus red) is rice fermented by a Monascus mold; the red color comes from polyketide pigments (monascorubrin, rubropunctatin). It is sold in two forms, and the form changes the questions:

Form中文Halal questions that follow
Whole/ground red rice红曲米 / 红曲粉media (plant-only?), no animal inputs, cross-contact
Extracted colorant红曲红 (Monascus red)everything above plus extraction solvent — often ethanol (source question) or water

Step classification: fermentation = class D (biological transformation) in the unit-operations taxonomy. Under this body’s operational rule, fermentation-route colors need a halal certificate; where none can be obtained, a flowchart + animal-free statement may suffice per own practice — credible for angkak only if the four conditions hold:

  1. Substrate is plant-only — rice, and in modern production also soybean/other plant nutrients (not animal peptone or meat extracts); the actual media list must be declared. The old “rice only” shorthand is wrong for large producers — see §4.
  2. No animal inputs anywhere — nutrients, enzymes, carriers.
  3. Extraction solvent disclosed — ethanol-extracted 红曲红 raises the alcohol source question; aqueous extraction avoids it.
  4. No shared equipment with non-halal or alcoholic lines (criterion 3).

If media/process cannot be evidenced, escalate along the decision tree (certificate or replacement) like any other fermentation product.

3. The client file — working checklist

What this file must close, mapped to the criteria:

That checklist is the file in miniature. The next section shows what one real producer looks like when the questions above are asked of it.

4. Supplier intel — Guangdong Kelong (广东科隆生物科技有限公司) 🔎

Tip initially raised in an AI chat session, then verified 2026-09 against the manufacturer’s own site and an official government notice (both cited below).

Company (source: own website): Guangdong Kelong Biotechnology Co., Ltd., established 1995, Jiangmen City, Guangdong (Xinhui District). Describes itself as specialized in research, manufacture and commercialization of food colorants and additives; produces Monascus red by submerged fermentation using rice and soybean with “unique extraction and refining” technology; claims to be one of China’s large-scale monascus and TG-enzyme production bases. Product families include MonascusColor (红曲红 / 红曲黄), TG酶 (transglutaminase), MeatProductsColor and BakingColor; exports to Japan, Korea, Southeast Asia, Europe and the Americas.

2024 finding (official): per the Xinhui District Market Supervision sampling notice 2024 No. 25 (2024-12-26), a batch of 红曲红 produced by Guangdong Kelong failed inspection with citrinin (桔青霉素) above the national food-safety standard. The notice is a production-sector food-additive sampling round; the batch was confirmed non-compliant by an initial lab and a re-inspection lab.

Reading for the halal file:

  • Fermentation raw materials are stated as rice + soybean — plant-only, so an animal-free claim remains scientifically credible, but the flowchart/statement must come from the actual manufacturer and name the real media. Do not copy “rice only” from this page into the file.
  • Citrinin is safety, not halal status. A mycotoxin exceedance does not make the material haram, and halal certification ≠ food-safety compliance. What it does is trigger criterion 2 item 9 (materials meet safety/health aspects per applicable regulations): request current-batch CoAs showing citrinin, and if a supplier has a published non-conformity, ask for corrective-action evidence before approving them on the register.
  • Chinese product-standard context: 红曲红 is a permitted colorant under GB 2760 (permission ≠ halal), and the product standard GB 1886.181-2016 (食品添加剂 红曲红) is the compliance yardstick the CoA cites. Legal-use checks and halal evidence run on separate rails — keep them separate in the report.

5. The alcohol side — the trap is the derivatives

Angkak itself (dried red rice) holds negligible alcohol. The risk sits in what the producer also makes or sells:

ProductRouteHalal reading (strict operational rule)
红曲酒 (red rice wine)alcoholic beverage from fermented red ricebeverage-alcohol product → khamr-adjacent; not usable on certified lines
红糟 / red vinasse / red lees (wet mash from 红曲酒 brewing, used in cooking)by-product of alcoholic-beverage brewingbeverage-alcohol derivative → haram at any level under the source rule 🔎
Dishes/marinades made with 红糟carries the 红糟 issue into the finished producttreat strictly; finished-product % is not the question — the source is

Auditor habit: when a sausage recipe or marinade lists 红糟, 红曲酒 or “red wine lees”, ask where the mash came from. If it is lees of red-rice wine brewing, the source rule rejects it regardless of residual percentage; a claimed culinary-only fermentation (not from beverage brewing) must be evidenced and is 🔎 per your LPH’s fatwa basis (the transformation/istihalah question in fermentation primer §4 applies).

6. Audit takeaway

  1. Which form — 红曲米 or extracted 红曲红 — and who actually makes it?
  2. Extraction solvent and its ethanol source; plant-only media list in writing.
  3. Same facility/line making 红曲酒 or selling 红糟 lees?
  4. CoA per batch incl. citrinin; no published non-conformities on the batches in scope.
  5. Evidence per the decision tree: certificate (recognized body, live-list check) or flowchart + animal-free statement from the manufacturer (template 07), batch-scoped.

One-line summary: angkak the colorant is credible animal-free territory once media and solvent are disclosed and the manufacturer is the one making the statement; 红糟/红曲酒 the wine-route derivatives are where the halal case falls apart — and citrinin makes the CoA a safety check the register must not skip.
